The Kitchen Raid Spotlights series takes a deep-dive into exploring the challenges of running a successful restaurant business whilst also offering our viewers exclusive insight into how our guest restaurateurs’ signature dishes are prepared.

In the first episode of Kitchen Raid Spotlights, we foray into a gastropub located in Purley, South London – The Jolly Farmers – where an enthusiastic spirit by the name of Big Mike resides to cater flavourful Caribbean food to the pub’s patrons.

Michael Springer – Executive Chef of Big Mike’s Calypso Kitchen – gives viewers an insight into what it takes to succeed (and struggle) as a food business. For the home cooks, he provides a real-time taste of how hectic it can get in the kitchen by preparing five signature items:
Tempura Salmon
Deep-Fried Sea Bass
Smoked Mackerel Curry
Potato & Chickpea Curry
Cajun Fried Chicken
